Superb product which uses top quality Italian pork in full respect of PDO (Protected Designation of Origin) process. The Pancetta is massaged with a mixture of salt and spices, tied and left to dry in special rooms for 7 days; after which the pancetta is transferred to aging rooms. Then it is matured.
The slices are compact and homogeneous, of a bright red colour, interspersed with the white of the fatty parts. Sweet and characteristic taste that is refined with the progress of maturation. Gluten free.
