This popular meat is produced from heavy Italian pigs, with the fattest animals being chosen. The process begins with the cutting and removal of the fat areas of the loin, which are then rubbed with salt, pepper, and fine herbs. This is a critical operation since the meat must properly absorb the flavours that will later come out in the taste at the end of the ageing process. The fillet is wrapped in straw paper and set aside for two months to mature. This is a special order item; please contact our offices for details.
